Best Margaritas?


"Hey, Barry, seeing as you brought up the subject, just where ARE the VERY best classic Margaritas made in Baja???"


My vote is for the little open-air beach bar at road's end in Playa Tecolote.

Rice and Beans in San Ignacio is excellent everytime!

Salisipuedes in La Paz does it right!

Here's two recipes

Traditional
40% 100% blue agave tequila (about 1oz), 60% controy (a big oz), 1 perfect key lime yellow in color squeezed over ice in a glass with a kosher/ballena style salted rim.

Perfect Margarita
4 Equal parts: 100% agave tequila, controy, water and key lime juice from yellowing limes over ice in a glass with a well salted rim of kosher/ballena style salt.

Choose hornitos or a similar 100% agave tequila

I've had the best ones at the El Candil in Mulege. Altough Guillermo turned me on to Guaycura Damiana at his place in BoLA.

When they had a Pemex in Catavina, we were waiting for it to open after siesta time. We wandered into the empty bar at the then, La Pinta. The three of us sat down at the bar and the waiter appeared, gave us an "un momento" got down on his haunches, cracked a pacifico and drank it all down in seconds. He was trying to hide from us but we could see everything.
Then he popped up and made us the best margaritas we'd ever had! Of course, it being 105 in Catavina, had nuthin to do with them being the best.;)
