Fish Tacos w/White Sauce
I was just having Fish Tacos in Los Barriles and they were delicious but no white sauce. Viejo Mexicos food is excelent but it made me wonder why I
always crave a few dollops of this creamy delight?! Is it sour cream and lime juice as I try to imitate? Yoghurt? Please don't serve me a Mayo
sauce thats been sitting out. What's your secret sauce, Amigos? I need to know. Thanks Tio

Here's mine...
1/2 cup sour cream
1/2 cup mayo
1/4 cup milk
Dash of garlic powder
dash of black pepper
Juice of one lime
2 tablespoons of dill pickle juice

Chop sweet pickles (not relish), capers, onions, equal amount of sour cream & mayo, crushed dill seed, fresh garlic & a splash of the sweet
pickle juice. Can substitute chopped dill pickles for the capers or use both. salt, pepper & lime, I like lemon better, to taste.

my recipe:either lala sour cream or yogurt, add onion salt, celery salt, garlic powder, chili pepper, black pepper, small diced onion, a little sugar
....
if you can swing by todos santos and get the fishing gear, I will make you lunch here in la bocana - howz that for a good deal ?????? we got some
really delish meals .....

Another twist I enjoy doing on occasion is using tempura batter instead of the regular beer batter. Use ice cold soda water for best results.

and the best white/yellow sauce recipe for bbq fish is mayo and mustard mixed, add diced onion and slother on the fish. bbq with skin side down.
unbelievably good. our local chef's recipe.

Tio, that is Creama, a sweet cream. On tacos, I like it plain or with diced pickles. For a special treat add a tbls of coconut milk to a small
container of Creama.

need t double check that fish recipe - Les and joaquin are both in punta chivato and they make that fish with mayo-mustard sauce and in retrospect, I
am guessing it is cooked with the skin side up ????? I will have to double check that ....

Mayo, sour cream, some of the liquid from a can of jalapenos, with some of the jalapenos. Add separately to your taco, Tapatio sauce, avocado,
cilantro, shredded cabbage.

Lots of different tastes, no? Dill, onion is what I've been missing. Jalapeno juice, wow! Mexican crema/creama might be better than traditional, tambien! I'm addicted! Thanks, amigos. It's fish taco season comin on.
