Be careful Shari, you can actually eat too much chicken, too many eggs and it's not just the colesterol.

...My personal favorite. :bounce:

Baby Chick Sausage with Peppers and Rigatoni
(Courtesy Of Park And Orchard Restaurant)

1 lb. of baby chick sausage, cooked, fried cooled and sliced,
1 large onion (sliced thin),
1 large red pepper (sliced thin),
1 large yellow pepper (sliced thin),
1 large green pepper (sliced thin),
1 cup diced plum tomatoes,
1 cup chicken stock,
1 tablespoon chopped garlic,
1 teaspoon oregano,
1 teaspoon black pepper,
2/3 cup extra virgin olive oil,
4 tablespooons grated Romano cheese,
1/2 lb. cooked pasta.

Heat oil on high. Add peppers and onions. Season with salt and pepper.
Cook until limp and add cooked chick sausage.
Saute together until sausage and peppers are golden.
Add garlic, black pepper and oregano. Toss and continue cooking 1 minute.
Add tomatoes, chicken stock, and check seasoning. Toss with cooked pasta and top with cheese.
Makes 2 servings.

i love that recipe and i'd put that on baja recipe forum section. u must be a good cook, cause i can tell by those ingredients...most people do not think of romano cheese in recipes.
