Bacon wrapped tuna medallions


Instead of fillets, cut your tuna into loins. From the loins cut about 1” to 1 1/2” thick medallions. Cook bacon strips in the microwave just enough to render some bacon grease, then coat both sides of the tuna with the bacon grease, wrap the partially cooked bacon around the perimeter and secure with toothpicks, then throw them on the BBQ, flip after a few minutes, smear on some additional bacon grease, then add a poblano pepper and a piece of pepper jack cheese on top for the final minute or so. Use as appetizers or for a full on meal, they’re absolutely delicious. Took some to my office years ago (made from albacore that I caught out of Morro Bay) and they flew off the serving platter in like candy. ¡Provecho!

Has anyone actually tried this recipe, and what’s your verdict? My coworkers and I all thought they were delish!

I tried it! Loved it. I need to try again. I left the BBQ for 5 mins and some were on fire from the bacon grease. I knew better :D
