Best huevos rancheros
One of our favorites is Nueva Chapala about 1 Km south of the turnoff to Coco's and Gonzaga on Hwy 1. The huevos rancheros is served on a crisp flour
tortilla with a sauce that can't be beat. I have never had better, and I've had lots. We stop for huevos rancheros for breakfast or lunch. It's great!
The truck stop ambiance is perfect and the laminated picture puzzles as art on the walls adds a great touch. Try it

When we were traveling around doing research for my husbands guide book, we made huevos rancheros the standard bearer for side of the road
restaurants. The best I have ever had was at the Happy Shrimp in Lopez Mateos.
We eat them weekly at Rigo's here in San Jose. $30 not the best but pretty good and the cheapest you can find around here.
The worst I ever had was at Rossi's between La Paz and Cuidad Constitucion mainly because I got huevos Mexicanos instead.
If you order from a senora or senorita, always order huevo ranchero. Not huevos...or so I have been told.
One of the other standards is beans. If the frijoles are good usually the rest is also.

We have enjoyed excellent huevos rancheros at International Rice and Beans. I order them with a side of some of the best chile rellenos you can get
anywheres!

Yep Rice and beans is one of the best
We like Cafe Ole also, great place for people watching. Another of my favorites is Loncheria La Mision. They are great.k

We were just having a family discussion trying to recall a BAD order of huevos rancheros we have had in Baja. We are stumped. We have come to the
conclusion that it's just that some are better then the others.
Keri, have you had the chile rellenos at Rice and Beans? Fabulous!

It's pretty hard to screw up standard Mexican fare if you use fresh ingredients. That's the key.
Mexican cooking, excluding complex sauces, isn't complicated. But even at it's best it's still average.
I've never had great huevos rancheros that I still wouldn't trade for average eggs Benedict.

But I think those muffins are hard to come by down here. Try huevos motule?os at La Fuente though. Pretty close.

We get ours
in the states. (I have a favorite kind) that costco doesn't carry. Besides, we hardly ever go to costco when Commercial is such a good store. Didja ever see the Mantequilla girl?
But I was referring to restaurants serving Eggs Benedict. Maybe Mallarimo and some of the ones in Rosarito but the restaurants we generally
frequent, they are unheard of.
Carol said once that the restaurant next to the Pemex in San Ignacio had really good Huevos Rancheros. Not my thing. I like chiles rellenos!

For something different in Chiles Rellanos, check out the restaurant at Riviera Del Mar RV Park in Loreto.
I liked the ones stuffed with tuna.

The Tropicana in San Jose has a breakfast Chile Relleno which is like an inside out one. The eggs are on the inside of the chile and the cheese is on
the outside, along with ranchero sauce.

I think I like the huevos rancheros even better at Paola's, across the street from the Loncheria. Although I must admit, I like the toasted tortilla
base at L.L.M. But I like the ranchero sauce better at Paola's.
I am going to try and get the girls at Paola's to do a crispy tortilla base, next time I'm there.
Guess I'll try Magana's next......

Never tried paolas but I like Loncheria for the fried flour tort also. Try Magana's machacha it is the best I've ever had.k yummy

How do you order your machaca at Magana's? Con Huevos or con verduras as largely a separate meat dish?
I like machaca con huevos but have had machaca with onions, tomatoes and peppers served separate from the eggs and I prefer this method.
