Tacos al Pastor


Does anyone have a decent recipe for the marinade for Tacos al Pastor? The research I have done (limited, to be sure) has not yielded much info. We've all seen (and most of us have tasted) the wonderful tacos made fresh on the spit at our favorite taco stands, but I have yet to find a carneceria (especially in the States) that sells a good pre-marinated meat, let alone the marinade itself. And any of the recipies I've seen don't even come close. Any ideas?

I live near a heavily Hispanic community in So Cal and they don't always cook it on a spit here, just marinate and saute it. But it's still one of my favorites. Because of its fruity/sweet flavor I expect it stems from Mexico's east coast somewhere near Veracruz. Yum.

You may be right


I also live near a heavily hispanic neighborhood, and have finally found a place that does braize it on a spit. The best I ever had was at a taco stand in Veracruz. Instead of an onion at the top of the spit, it was a large chunk of pineapple. A small slice of that in the taco was pure ambrosia. Thanks for the link.
