we've NEVER eaten roosterfish:no:
they don't have it at the local grocery store:spingrin:

what does it taste like (besides fish DENNIS:spingrin:)...

resembles the taste of what other common fish?
texture?
solid or soft?
dark or white meat?
how would you filet it??

Pompano, what kind of a tide do you have to have to launch at Santispac? Were you in that 26 Striper?

Try a can of cat food flavor mackerel and you know what a roosterfish tasted like (at least the can smells like that, never tasted it)

the larger they get the nastier and darker and oilier their meat becomes

small ones are OK fried and eaten in tacos

best to release

Hook, the sandy launch at Santispac is best done with 4X4 in gear going in and coming out. The tide was fairly low, but we use a roller EZ-Loader trailer and that makes it a snap to launch. We only needed about 10-12 inches of water to float her. While I usaully launch my boat at the casa, this time was in a friend's boat...a 20' Striper CC...and he lives close to Santispac...hence the beach launch.

The best area to launch at Santispac: go thru entry gate ...jog slightly right and go straight ahead to beach. You will see the hard packed area. It shelves off quickly and you are good to go.
