It's warming up, time for cool drinks! I have found the dried Jamaica flowers at Gigante. You can cheat on this, Lipton makes a good Jamaica tea, just boil water, put in tea bags to whatever strength you want, add sugar and refrigerate.or...the real McCoy:

For 8-10 servings
3 cups /100g dried Jamaica flowers
16 cups/ 4 l water
1 1/4 cups/230g sugar

Rinse the Jamaica flowers thoroughly and drain well. Simmer with 8 cups of water for 10 minutes. Remove from the heat and let stand for 30 minutes. Strain, reserving the infusion and discarding the flowers. Combine with 8 cups of water and the sugar. Stir until the sugar dissolves. Serve cold, with ice.
