Manchego Cheese

This is a sheep milk cheese that has an unbelievable flavor. It is primarily produced in Spain. Perhaps I was lulled into a false sense of availability when I found it at Wal-Mart in Cabo. It really makes for a great cheese omlette. Found it at Wal-Mart in Ensenada, too. Back in the States, could find it only in upscale shops at like $9 a pound. That's like 4X what I paid in Mexico. I figure there's a tariff issue between the U. S. and Spain. Too bad, because this cheese is the bomb.

I buy Manchego here in so cal at Stater Bros . I love this cheese, as it melts perfectly and is an excellent snacking cheese. If you want to make an enchilada that will make your friends and family silent (wow, what IS that taste?)followed by applause, this is THE cheese to use. Also, Chile Rellenos, stuffed with Manchego, topped with queso fresco...yeah I have secrects;D:dudette:It costs about $4.50 for a small round but it goes a long way and well worth it!

Trader Joe's has it in the States. Last time I bought it was near Thanksgiving. It was about $4.50/lb.
Makes for a great comment when using it for making macaroni & cheese.

Thanks, guys. I now remember seeing it at Trader Joe's. But not at Stater Bros. What was cool at Wal-Mart-MX was they even sold it sliced, so using it in a sandwich was easy.
