They Say if the Cops Eat There, It's Good
Whoever "they" are.
Carnitas Los Panchos (I have written a good review or two about this place on this board already) offers a wide range of choices -
deep-fried-till-crispy, delicious piggy piggy.
This is a pick-your-part operation; shoulder, ribs, belly, intestines, ears and this-and-that other stuff of the pig where I daren't go, but which
probably put the proof to James Beard's famous remark that, "Everything on the pig is edible, except the oink."
Los Panchos also offers carne asada served in various forms and breakfast. But why waste your valuable stomach space with afterthoughts? Los Panchos
hews true to the Mexican philosophy of doing one thing and doing it supremely well.
What has this to do with cops, you say? Well, not what you might think.
Today at lunch at Los Panchos, hubby went to the gents to wash his hands. A gentleman in a beautifully tailored suit entered, stripped off his suit
jacket and also started washing his hands.
The gentleman was wearing two guns, holstered bandolier style, high up on his chest. He was also wearing a semi-automatic pistol in a holster on his
belt.

Until today.
All the table servers/wait staff (Dear G, I get so tired of navigating PC speak) are all men.
The ladies run the kitchen in the back and the cash register in front. The person manning the meat station with the hot lamps, also up front (not to
be too repetitious) is of the male persuasion.

Carnitas Los Panchos, Rosarito
Is located on the north side of the TJ-Ensenada free road, about 1/2 mile east of the bridge over the Cuota (Toll Road), between the next-to-last and
last traffic signals if you are traveling to Rosarito. The building is a low, one-story cement block building with a take-out window and stools next
to the entrance. Carnitas Los Panchos is painted on the front. Right next door, ro the northeast is the easy-to-spot, two-story, yellow-brown brick
building with a sign that says "Borrego"

Edit note: A couple of tourist web sites list Los Pancho's address as 21.5 km and El Bprregp de Oro's address as 29 km. This is puzzling, since the
fact is that they are right next to each other with a small dirt access road separating the buildings.
Ah Baja. even confirming a correct address can become an adventure!
