They seem to dry quick enough that the flies leave them alone and the stink "mostly" goes away. I brought one home to Oregon last spring and have it hanging outside the window where I can see it as I type.

Very tasty I might add, makes great ceviche or excellent fried for fish tacos, however I prefer them fresh to those in the pic.
