BBQ RIBSat Ana's - HOW THEY DO IT!




Ana's Beachfront Cafe & Waterhole, Santispac Beach, Bahia de Concepcion.



For the last year or so, Russ & Lupe have been hosting & roasting.

"How do they do it?"

Well, glad you asked... Here's the easy step-by-step method of how to roast a pig.





1. Get yourself a pig.



2. Start your cook-fire early, to let it burn down to hot coals.....but be careful. ..Always have a fire extinguisher handy..and a Pompano to hold the hose.






3. Trim and season the pig BEFORE roasting...shove a pole up the pig's _____ :wow:

Very Important Note: Make sure your pig is dead at this point. Uh..well, ya'see..we've had a few..um..oversights.. in the past...sigh.





4. Test several sauces before choosing. (I would avoid 'Pompano's Suicide Sauce'..:rolleyes:)


5. Put the meat on..kick back and relax..open a few..listen to a few tunes...





6. After it is thoroughly barbequed and the cook's are sober enough to hold a knife...cut up the pig and throw it to the mob.




EAT AT ANA'S EVERY SATURDAY NIGHT - SERVING HUMANS FOR MANY YEARS.








Footnote:

REWARD offered for the return of a runaway pig...can be indentified by a long silver pole sticking out of it's butt.

I'll have to time my return trip to check on the quality of the ribs for sure. Nothing matches a bunch of pig in my poke!! :spingrin:
Cruised by the Jungle on Friday afternoon, hoping to run into some Nomads, CLOSED!!! :o
Wandered up the river, under the bridge, and found "The Shack". Nice little dive. Turns out the guy running it used to own Baja Burgers in La Mision. Small world, I've eaten there many times in the past.
