Ensalada de Pollo w/ Beg Eye


I had made some chicken soup on the weekend and was asking the family what they thought I should do with the leftover chicken. My Baja born and raised hubby suggested:

Ensalada de Pollo

Here's the recipe:

Cooked and shredded chicken ~2 cups
Veg All 1 can
Best Foods Mayonaisse (till creamy...the more the better for hubby)
Salt and pepper to taste.

The big joke around the dinner table was how my husband pronounces Veg All. It always sounds like "beg eye" to me. Needless to say my daughters and I had a good laugh over Daddy's recipe!

So Easy and Convenient


I need to get more "begs" in hubby's diet and this looks just great for a last minute meal.

I tend to not think about canned veggies, because I am not familiar with them.

Great recipe, Heather. I sometimes sautee the shredded chicken in a little olive oil and "Knorr". Knorr to enhance the flavor, and sautee to get it a little crispy.
