Caracol Escabeche, ay cabron!
in june we made a quick run "out there" and didn't get much love from King Neptune. old friendships were rekindled and we spent some quality time with
our amigos. seems there are 20+ pangas going after the almeja (a type of gooiduck - donkey dong!) during the summer months. my buddy Israel now has
his own panga waiting for lobster season. his mom Mercedes makes the best pickled caracol escabeche you will ever eat. this is the same family that
used to supply La Mijita's taco stand in El Rosario, until "that" day that tore a family apart. RIP Elsa, la paloma
anyways, here is the good stuff. the ingredients change with the season. this time was solo caracol. sometimes Mercedes uses lobster, sometimes
abalone, sometimes mussels, or my favorite, all of the above.

funny thing is the boys are going 10 miles to get these almejas that get sent straight to the far east..... chinito's are looking far and wide to get
their chopsticks on some good eats! can't blame them, eh?

Those clam siphons are deeeelicious. They taste like both crab and shrimp. You just have to hammer them real good. To the point where the muscle
fibers start to separate.
