Re-Fried Beans



I just made the greatest pot of frijoles refritos that I have ever tasted (if I do say so myself!!)
2cups of pinto beans- soaked for 4 hours
rinse and put in heavy pot with
6cups cold water
1 serano pepper diced
1 inch ginger grated
1 large sweet onipn chopped
Simmer for 1 1/2 hours
Remove 2 cups cooked beans and whip the remainng. Add whole beans back to pot and add aprox 3-4 tbsp bacon fat.

I tried it and I like, it the ginger dose amazing things to the taste. I add a little bit of grated crisp cooked Bacon for flavor and a little Les bacon grease.

its a winer and rates a space in my recipe database Thank you for sharing it.

That recipe sounds good. Nice to have a slightly different twist on an old standby.
I'll have to try that one.
