One frying pan breakie


I like this recipe because no matter where in Baja you are, you can get the ingredients
1 or 2 eggs person
1 potato per 2 persons
1 can casera salsa per 2 persons.
oil for cooking
In a frying pan, cook diced potatoes(the smaller they are diced, the quicker they cook) until tender. Add salsa and heat through. With a spoon, make a hole in the pot/salsa for each egg and drop them in. If you can get your hands on some cheees that melts, sprinkle some on the top, cover and cook until the eggs are cooked the way you like them.
Spoon each egg/potato mixture onto a plate. Serve with tortillas

*If you like it HOT, I have found that the ranchero canned salsa is hotter.
