Try the Chilaquiles at La Bamba next time you're in Rosarito. It may be an "American 50's Diner" but the mexican food is great! The chilaquiles there
are outstanding. They make their sauce and the portion is huge.

My favorite breakfast places in La Paz:
La Perla: Aztec Omelett, an egg Omelette stuffed with Chilaqiles and Chesse.
Baja Biscuits: The Burrito is king.
Gorilla Grill: Good american style breakfast's, stay away from Mexican style.
Samael's: Best Chilaqiles in town.
Would rather have a Snickers bar:
Applebees: Well, they are not famous for them.
Vips: No flavor whatsoever.
Rancho Viejo: Days old frozen and reheated food.

Mision Santa Isabel in San Quintin. I like the verde con pollo, huevos, y mucho cibollas.

"I'm addicted. Can't say why, but seems at desayuno time, no matter what temptations I see on the menu, I invariably opt for chilaquiles"
Me, too! Chilaquiles are my favorite. When I am in Mexico and we go
somewhere and they are not on the menu, I am sad I love them best with red sauce
and two eggs over-medium on top...beans on the side and a big mug of coffee. It is difficult to find them here in the states, but I talked a small,
local Mexican Restaurant into cooking them for me one Sunday...they were good, but are always best when eatten in Baja. What is it that makes them so
darn delicious????
Whenever I hear that rainy, chill wind blow. I think it may be time to head for Mexico. Tengo que obedecer mi corazon!

Try Restaurante Mision Sta Ysabel on the north end of San Quintin - best chilaquiles I have had, over and over and over again!

Just ask if you can have chiliquiles.
I think that a lot of restaurants don't have them on the menu because it may be considered as more of a "at home" offering and very inexpensive to
prepare.
