You havent had a good batch of mole, amigo.
In good ones, the chocolate flavor takes a back seat to the taste of the peppers, cloves, cumin, anise and other indigenous spices.
Some dont use chocolate at all.
They are a flavor explosion in the mouth. Particularly good with a mild meat like chicken or pork loin that doesnt overpower the mole.
Maybe Gypsy Jan can point you to an upscale restaurante in your area with a good green mole or a red with little chocolate. Lesser restaurantes will
probably rely on Dona Maria in the jar; passable, but not as good as a meticulously crafted one in a high-end restaurante.
El Rey Sol used to make a good one. But that was many years ago. Havent been since probably the 90s now.

I agree with Hook. I first had a Mole that was so sweet it was sickening. Didn't eat it again for years. Someone made me try it again somewhere
else, and it was made perfectly. Not too sweet.
Now I love it. If you are in San Diego, go to Super Cocina on University. They have amazing Mole, and other authentic dishes from around Mexico.

I didn't like mole either the first time I tried it ... maybe it is time to give it a second chance ... is the US version radically different from the
Mexican version ?

good stuff. in a pinch, they sell 8oz cartons of mole and every other style of sauces in every market in baja... just bring a yardbird and some rice
and pour it on heavy.
