Extra virgin olive oil and aged balsamic!
These condiments have been proved to be beneficial to your health.
Really no point to this, though it is a good idea to substitute them for butter, mayonaise and bottled salad dressings whenever possible. Just
curious to see if they can generate as much discussion as mayo and manteca
And how is this Baja related, you ask? Has anyone tried balsamic vinegar, or maybe malt vinegar on your fish tacos?

I cook everything now in extra virgin olive oil (someone once quipped - how do get an extra virgin). I've noticed that I can do so regularly and
maintain my weight. But as soon as I start eating out with saturated fats the pounds immediately start to climb.
I prefer lemon juice on fish instead of vinegar. Although sauteing shrimp in vinagrette comes out pretty good.

Now that's one hell of a great idea! Will try it in a few weeks. That olive oil folks....110 calories PER TABLESPOON!
Old people are like the old cars, made of some tough stuff. May show a little rust, but good as gold on the inside.

Unfortunately John does not much care for balsamic vinegar so while we use lots of vinegar, we seldom use balsamic. My favorite is rice wine vinegar
--- great on everything. I imagine malt vinegar would be good on fish tacos as it is good on fish and chips.

Prefer lime juice over lemon juice in just about any application. In Baja, key limes are very cheap. Actually, if you get a small key lime tree, it
will produce most of the year round.
While canola is not as subtly tasty as olive oil, it is at least as healthful for you as olive oil and is 1/3 the price of olive oil.
