I've never "canned" fish....and I'd like to see some of the product as well as hear your process.....particularly how you smoke them and then can......my background is fresh water, mostly trout and some koke's, they always smoke up nicely but I have no idea how to can any of them.....nice photos.....my fishing companions have grown up and flown the coop, living independently and seem to be happy with their lives.

I, too, love tuna but rarely am able to catch many. I just read in the October 2014 issue of Consumer Reports that the Worst fish to eat for mercury intake are Swordfish, Shark, King Mackerel, Gulf Tilefish, Marlin, and Orange Roughy. These fish are easily avoided by me and mine But, the other category of "limit your consumption of these higher-mercury fish" include fresh Tuna(except skipjack), Grouper, Chilean Sea Bass, Halibut, Bluefish, Sablefish(black cod), and Spanish Mackerel(Gulf).

This is not unexpected but still troubling since I have had some success in catching halibut and tuna in the past. Maybe being not that skilled at catching fish is a good thing?? But then again, at my age who GAS!
