Happy St. Patrick`s Day!
Everyone's Irish today. Hopefully, the peninsula is well watered and green these days. If not, t-shirts will do!

I slow cooked a chunk of corned beef brisket in a crock pot so that I could smell it all day. It was delicious!
I have to confess that I forgot to wear green. My Irish ancestors would be disappointed!

We celebrated on Sunday with a 3 lb corned beef brisket, plus: garlic, onions, carrots, red potatoes, and cabbage. Usually, I use a slow cooker but we
now have an Instant Pot pressure cooker with a ton of online recipes, including one for this. It came out very good... so that was a pleasant
surprise! My wife, who isn't a big fan of corned beef, actually cleaned her plate!

Since nothing else to do we slow cooked corned beef, taters, carrots, onions. Meh, not my fave.
But I will make corned been hash on Sunday, which I really like.
