Yummy Yummy fish taco's


Well it has finaly warmed up in Canuk land, and we went fishing this morning. With the two fish we caught, we made really good fish taco's. If I closed my eyes real tight, I could almost make myself believe I was in Baja!!!:smug:

Well they wern't real trtillas, they were just the store bought ones, but they were still good.

We had a baja moment on Saturday night; warm evening, sitting out on the deck with friends, the Herradura flowing... fridge just happened to have avocados, jalapenos, cilantro, limes, shrimp and tortillas. Whipped up a batch of guacamole for people to nibble on while I fried up the shrimp and laid out a very decent shrimp taco spread.

May not have been authentic, or even reasonablly comparable to the streets of La Paz, but it still felt damn good to enjoy.

Next NOMAD get-together...
I'll offer to make the fish and shrimp tacos. I have compiled 100% the original fish taco batter recipe after several years of taking notes and asking for the cook's recipes (or buying it) in both San Felipe, Ensenada, and San Quintin.
We'll work on going to Ensenada for the angelito and shrimps as well as stopping at a tortilleria nearby.
I'm not offering to pay for everything, but what I will do is provide the labor and my restaurant/catering equipment to help feed everyone.
I have fed about 800 people at a time with my genuine Mexican fryer and my catering set-up. But that could be ratcheted up a bit if more members show up. With my equipment I am capable of making 5 gallons of pico de gallo in 15 minutes.
