Although I never thought of targeting them, I once caught a really big carp on the upper Cape Fear river in NC. I didn't want to throw it back but I didn't know what to do with it. The only recipe I'd ever heard about was the old Chinese one about baking it on a board covered with straw and cow dung, then throwing away the carp and eating the cow dung.

But, I decided to ask advice from Fish and Game. I lucked out and got to talk to a female agent who was originally from the Midwest. She advised me to clean it and cut it in chunks, then soak it overnight in salt water, then smoke it. I did and it was great, especially on crackers with cream cheese. I took a platter of it to work and left it in the lunchroom for everyone. I didn't say anything about it. All day people were talking about the gourmet smoked fish. Finally it got out that it was mine and they demanded to know what it was. I said it was "Cape Fear Salmon".




All my childhood I wanted to be older. Now I\'m older and this chitn sucks.

my buddy was telling me that there is a bounty on them and that a few guys are making a killing as there are very few competitors.
