I smell a rat. As I recall, your wife knows a thing or two about baking. Are you just passing off someone else's work as your own? Are you a poser English Muffin Baker? I demand to see your official records.

I've found 5.5 oz cat food cans work better. They're a bit fatter than tuna tins. The key to nooks & crannies is getting the yeast working. Let it sit until it starts to bubble a bit then incorporate it with the dry ingredients. Also, the dough should be wet and sticky. You may need to add more liquid. BTW, if you don't have powdered milk you can substitute milk where the recipe calls for water. I also like to throw in an egg.

I am an English Muffin Maven. I graduated Summa Cum Laude from the David K School of English Muffin Making. When I am not making English Muffins I am lecturing about them. I frequently sleep with English Muffins. :cool:

I wish I could document my curriculum vitae but all records were destroyed in the great muffin fire of '07. We also lost the cat. Burnt to a crisp.

Well, MY English muffins~~when I get around to making them~~ will taste of nothing but muffin. Not a hint of fish, liver, lamb or chicken pet food for me!
