Oh...I see. You just use a little teeny piece of bacon. :light:

gosh darnmit Ed...

You have made me hungry for dove breasts por manana.

Which means I'll have to get things ready for a little dove hunt tomorrow. And that's not necessarily a bad thing at all, is it? Thanks for whetting my appetite.

Here's another good tried and tested recipe for you.

Grilled Dove with a Pacifico Marinade

INGREDIENTS:
-10 dove breasts
-1/2 cup red wine
-1/4 cup Italian dressing
-1/2 bottle Pacifico (you know what to do with the rest)
-1 teaspoon cayenne pepper
-1/2 teaspoon salt
-1/2 teaspoon ground pepper

DIRECTIONS:
In a large bowl, mix all ingredients together except dove breasts. Then add the dove. Cover and refrigerate for at least 4 hours. Remove dove breasts and save the marinade.

Grill dove over medium heat until golden brown.

In a large pot place in the grilled dove and the marinade you saved. Bring to a boil. Reduce heat and simmer for 15-20 minutes and serve.

Damn good.

If you don't like this, your taste buds are dead.
Adios, I'm heading to bed.

I do what the voices in my tackle box tell me.

Only 40 years in the Coachella Valley could come up with a REAL Dove recipe:

As many Dove Breasts as you need (what limit?)
Dust with seasoned Flour (Salt, Pepper, Seasoned Salt, Small amount of Cayane Pepper
Brown in Bacon Grease
Move to Oven safe Pot with lid
Put dove with remaining sauce in Pot
Put in a coulple cloves of garlic
Pour about 3/4 cup of Dry Vermouoth
Cook in Oven about 40 minutes or until
meat is falling off the bone.

Serve with Brown Rice

Pompano and Mulege Jim are spot on. Kansas dove murderer here.
also works with quail.
the bacon will keep the birds moist and don't over cook.
another thing is i drench the birds in olive oil or italian dessing before i wrap them.
bake or grill.
