in Chiapas we found CHAPULINE HOT SAUCE or grasshopper hot sauce. It is only sold when these critters are in season and Les said it was really good -
sorry to admit I was too squeemish to try it ....

We go through a Qt. of Tapatio every 6 weeks or so. We find the Sriracha to be a bit sweet. We have a 3 or 4 Habanero based floating around most all
the time. We try to stay away from the enhanced sauses with the exception of Dave's Insanity sauce.
We also grind Pinquins (birdeyes), Habaneros. Cayenne all together go through about a pound a year.
Because of my surfing, we don't use salt this could be a reason for liking the hot.

I always figured I got more then FDA recommended through my nose. I'm in the

leave the salt alone. there is more than enough in the processed crap, er food we all eat. it'll kill ya....
flush your sinuses every time you paddle out and take a big drink. you'll get the salt and think of all the minerals and trace elements in sea
water.

If you happen to be going by San Ignacio Springs you can stop in and buy
some of the homemade jalapeno jelly. It is great on bread, crackers, meat etc.
