Blanca's (slightly) Spicy Mexican Chicken


Made some today - anyone in the area, welcome to come by and taste test it ! It is easy and quite fun to make:

Ingredients:

chicken breast - 1.5 or 2
can of DEL-CAMPO SALSA DE CHILE COLORADO
one cube chicken boullion
2 large onions
butter
4 anaheim ( AKA california) chiles
gas stove

procedure:

boil chicken and boullion in enough water to cover the chicken. about 30 min. when cooked, remove water and let cool. shred with fingers. set aside.

on an open flame (need gas stove), burn the outside of the chiles. burn til very black on all sides. Stick in a plastic bag as they are burned and leave bag closed so that they sweat. after the last chile is in the bag for 4 or 5 minutes, remove the black layer that is on the outside of each chile (I run it under water).

cut the chiles in half. remove the "tops" , remove the seeds. dice.

dice large onions, add chiles, and sautee with butter.

when done, add everything to chicken in a pot:

salsa
onion and chiles
salt and pepper to taste

and heat up. serve 6. serve with rice, a tossed salad and a veggie. and let me know how it goes !

far right is blackened chile
next over is the outer layer of skin peeled
third is the open chile with seeds
and lastly, the final version with top and seeds removed

My hubby does his chiles like this, but then slices them and adds media crema and cheese...delicious! Chiles en rajas...

This chicken looks good, may have to try it!

Queso para quesadillas (or mozarella) so it melts. He sautes onions first and then adds the roasted chiles for awhile, then the crema for a minute or so, turns off the burner, and then adds the cheese...served with frijoles frito and flour tortillas....

I may have to get some chiles...have also done it with adding some corn, or zuchini, or mushrooms with the chiles.

Have used sour cream instead of the media crema, but not quite as good!
